Longing For Leftovers
Last week's Thanksgiving meal was marvelous.
Marvelous -- except for one thing. I seriously MISSED the leftovers. What's T-Day without tender slices of Roasted Turkey and mounds of Stuffing chilling in the refrigerator? Is it really Thanksgiving if I don't have surplus grub at the ready throughout the next week?
Unwilling to cook up a whole gobbler for the sake of leftovers, I decided to roast up a plump Chicken with Rosemary, cobble together some Sage Stuffing, saute slices of Honeycrisp Apple in Cider and boil up spears of Asparagus with Butter and Sea Salt.
Not only did the meal satisfy my need for Thanksgiving dinner redux, but there are still scraps awaiting me in the fridge.
