Again With The Celery

Remember when I said "Don't sleep on celery"? Well, celery is again in my sights. This time from the Williamsburg restaurant Le Crocodile, in the form of their genius Waldorf Salad.
If Wikipedia is to be believed, Waldorf salad is named for the Waldorf-Astoria hotel in New York City, where it was first created for a charity ball given in 1896. Traditionally, it is composed of celery, apple, grapes, and walnuts, dressed in mayonnaise.
Le Crocodile's version? Celery (natch!), red onion, apples, golden raisins, and candied walnuts, served over a crème fraîche dressing and finished with shavings of Bayley Hazen Blue cheese.
Haven't uncovered the recipe on the interwebs, but I am keeping my eyes peeled - and I might have to try to recreate it without any guidance.
Then again, maybe I just pay a return visit the restaurant and order one up with a crisp glass of rosé. Hmmm...
